The Aztecs dominated Central and Southern Mexico from the 14th to the 16th century. Cooking was an integral part of the Aztec culture. Their experimentation with various vegetables, fruits, and spices laid the groundwork for the recipes that Xochitl uses in our products today. The Aztec people were the originators of the sun-dried and smoked peppers, called Chipotles (smoked peppers). The flavor from the chipotle pepper is now regarded as one of the most delightful and distinguishable flavors in the world.
